One of Xaver's most favorite appetizers is chicken satay from our local Thai restaurant but unfortunately, we do not eat peanuts so we rarely order these. Why not make our own nut-free sataysat home with the Latin flavors love? That's just what we did, pairing our Mexican Chicken Satay skewers with a delicious Creamy Chipotle Dip made with Knorr Caldo De Pollo Bouillon. This recipe is quick, easy, and packs amazing flavor. Your tailgating party just got yummier!

This dip goes great with just about everything you could possibly serve at a party. I almost couldn't keep my hands off it after we made it! This Mexican chicken satay recipe ispretty amazing when paired with this dip and it's such an easy party dish or main dish. Set these in the middle of the dinner table with the dip and a salad for a quick, easy dinner full of spicy Latin flavor.

A flavorful variation of chicken satay skewers.

Ingredients

  • 2 lbs boneless chicken breasts, sliced into strips (1.5″ to 2″ wide)
  • 1 tsp kosher salt
  • 1 tsp chile flakes (red)
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp black pepper
  • 1/4 cup lime juice
  • 24 bamboo skewers

Instructions

  1. Toss chicken strips with spices and juice to coat well.
  2. Marinate in the refrigerator for at least one hour.
  3. Soak skewers in water for at least 15 minutes to prevent burning while cooking.
  4. Prepare a grill with coals for medium to high heat.
  5. Insert the skewers through the meat.
  6. Place skewers on grill and cook until internal temperature of the meat is 165º F.
  7. Serve with Knorr's Creamy Chipotle Dip.
